Plum pie


  • 5-6 plums, pitted
  • 0.5-0.75 cups sugar
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1+ tbsp butter
  • 1/4 cup AP flour
  • 1 egg

  • store-bought crust, or handmade following AB's advice.  Can substitute any dark rum for the applejack

  1. Preheat oven to 400 deg F
  2. Slice plums into quarters, then into thin slices
  3. Toss plum slices with sugar, cinnamon, salt, flour and butter
  4. If crispy bottom crust is desired, get rid of excess moisture from fruit, see article
  5. Line bottom of pie tin with crust
  6. Fill pie crust with plum filling
  7. Top filling with upper crust
  8. Use a knife to poke shallow holes in crust
  9. Use a brush to apply eggwash (egg mixed with 3 tbsp water) to crust (optional)
  10. Bake for 45-50 minutes with baking sheet below pie to catch any pie juice drippings

Can be adapted to other fruits, including apple pie
