Marinated soft-boiled egg


  1. Bring 2 qts water to a boil
  2. Add the eggs straight from the refrigerator using tongs, a wire spider, a ladle, whatever, and do not put the lid on
  3. Remove the eggs after 6 minutes and run under cold water for one minute
  4. Carefully remove the shells and place into the reserved marinade
  5. Put a wet towel on top of the eggs to submerge them
  6. Leave the eggs to marinate for at least 2 hours.  I will admit that the full 4 hour marinating recommended by J. Kenji Lopez-Alt does improve the taste.
